Our Verdict

The OXO silicone mat is a well-made, fairly priced half-sheet liner that makes everyday baking easier: nothing sticks, cleanup takes seconds, and cookies bake evenly from tray to tray. Its 450°F limit and slightly softer bottom browning mean it isn't the pick for crusty bread, but for ube cookies, cream puffs, and sweet rolls it's an easy upgrade over parchment. Our ube craquelin cream puffs bake at 400°F and then 350°F, well inside its rated range.

What We Liked

  • Sized at 11.5 x 16.5 inches to fit a standard half-sheet pan, which is what most ube cookie, cream puff, and roll recipes use
  • Food-safe silicone molded with a fiberglass core, a design meant to keep it flat on the pan and help cookies bake evenly
  • Truly nonstick: sticky ube crinkle cookies, sugary craquelin, and caramelized edges release cleanly without greasing the pan
  • Reusable for years, so it replaces a lot of parchment, and it's easy to wipe clean
  • Highly rated at Target, with 4.7 stars from 87 reviews at $24.99, and shipping when we checked

Drawbacks

  • Rated oven-safe only to 450°F, lower than some competitors such as Silpat, so it isn't for very hot bread or pizza baking
  • Choux and cookies brown a little less on the bottom than on bare metal or parchment, so some pastry chefs prefer parchment for maximum crispness
  • Never cut on it or put it under the broiler; knives and direct heat damage the fiberglass core
  • More expensive than a roll of parchment up front, and you'll want two mats if you bake two trays at once
