Fudgy Ube Crinkle Cookies with Powdered Sugar
These iconic purple crinkle cookies are a staple at Filipino holiday celebrations and bakeries. Crispy on the outside, ultra-soft and chewy on the inside with a sweet coconut-ube aroma.
Ingredients
- 2 cups All-Purpose Flour
- 1 tsp Baking Powder
- 0.25 tsp Fine Sea Salt
- 0.5 cup Unsalted Butter, softened
- 0.75 cup Granulated Sugar
- 2 pcs Large Eggs
- 0.5 cup Ube Halaya (Purple Yam Jam)
- 1 tsp Ube Extract
- 1 cup Powdered Sugar (for rolling)
Instructions
- Whisk Dry Ingredients In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- Cream Butter & Sugar In a stand mixer fitted with the paddle attachment, beat softened butter and granulated sugar until fluffy (approx. 3 mins). Add eggs one at a time.
- Add Ube Flavor & Chill Dough Mix in ube halaya and ube extract until vibrant purple. Gradually add dry ingredients until a soft, sticky dough forms. Wrap in plastic wrap and chill in fridge for at least 2 hours.
- Roll & Coat Preheat oven to 350°F (175°C). Scoop 1-inch balls of chilled dough. Roll generously in powdered sugar until heavily coated.
- Bake to Crinkle Perfection Place on parchment-lined baking sheet 2 inches apart. Bake for 10-12 minutes until cookies puff and crinkle. Do not overbake to maintain fudgy center.
Pro Tips
- Chilling the dough for at least 2 hours is essential! Warm dough will spread flat and absorb the powdered sugar.
- Roll dough balls first in granulated sugar then in powdered sugar for an extra dramatic white crackle contrast.
Variations
- Ube Cheese Crinkles: Press a small cube of sharp cheddar cheese into the center of each dough ball before rolling!
