Ube Protein Smoothie Bowl

This smoothie bowl turns ube powder into a thick, spoonable breakfast rather than a thin drink. Frozen banana and Greek yogurt give it enough body to hold toppings without a straw, while a scoop of vanilla protein powder and the ube itself add natural sweetness and that signature violet color without needing any artificial dye. It comes together in one blender in under 10 minutes and keeps you full well past mid-morning.

Ingredients

  • 2 whole Frozen Banana, sliced, Peel and slice before freezing so it blends smoothly
  • 1 cup Plain Greek Yogurt, Full-fat or 2% blends creamiest
  • 2 tbsp Ube Powder, Sifted to avoid clumps
  • 1 scoop Vanilla Protein Powder, Whey or plant-based both work
  • 0.33 cup Unsweetened Almond Milk, Add a splash more if the blender struggles
  • 1 tbsp Honey, Optional, to taste
  • 0.5 cup Granola, For topping
  • 2 tbsp Unsweetened Coconut Flakes, For topping

Instructions

  1. Blend the Base Add the frozen banana, Greek yogurt, ube powder, protein powder, almond milk, and honey to a high-powered blender.
  2. Blend Until Thick Blend on high, stopping to scrape down the sides once or twice, until the mixture is completely smooth and thick enough that a spoon stands up in it. Add a splash more almond milk only if the blender is struggling.
  3. Pour Into Bowls Divide the smoothie between two chilled bowls and smooth the tops with the back of a spoon.
  4. Top and Serve Arrange granola, coconut flakes, and any extra fruit in rows or clusters across the top. Serve immediately with a spoon, before it has a chance to soften.

Pro Tips

  • Freeze the banana slices at least a few hours ahead — a fresh, unfrozen banana won't give the bowl its thick, scoopable texture.
  • Chill the serving bowls in the freezer for 10 minutes beforehand so the smoothie holds its texture longer while you arrange toppings.
  • Sift the ube powder before adding it, same as with the energy bites — it clumps in thick mixtures like this one.

Variations

  • Dairy-Free Version: Swap the Greek yogurt for a thick coconut yogurt and use a plant-based protein powder.
  • Extra-Indulgent: Swirl in a tablespoon of ube halaya jam before topping for deeper flavor and a marbled purple swirl.

Frequently Asked Questions

Can I make this ahead of time?

It's best blended fresh and eaten right away since it starts to soften after 15-20 minutes, but you can pre-portion the frozen banana, yogurt, and ube powder into a freezer bag the night before so it's ready to blend in the morning.

Why is my smoothie bowl too thin?

This usually means the banana wasn't fully frozen or too much almond milk was added. Use fully frozen banana slices and add liquid just a tablespoon at a time until the blender catches.
